Soji ki puri

Ingredients:
soji- 1 cup
jaggery- 1 cup
fennel (saunf) powder-1 or 2 teaspoon
cardamom powder - 1 teaspoon
maida -1 cup
ghee - 2 tablespoon
milk - 1/2 cup
oil - to deep fry
water - required quantity


Procedure:
Make the soft dough of maida by adding ghee and milk into it, and adding required quantity of water. Keep it aside.

On the pan add 2 teaspoon of ghee, heat it, now roast the soji in it till it get golden brown colour on low flame. Keep it aside. In a vessel take 2 cups of water and let it boil. When water starts boiling add roasted soji in it .(take care that soji does not form lumps) . Stir continously. When soji is cooked add jaggery and stir. Add fennel and cardamom powder and leave it on low flame for 5-8 mins till it is well cooked. Then leave the soji to cool at room temperature.

Now make small balls of the dough and of soji. Flatten the ball of the dough and place the ball of soji into it . Gently roll the ball of dough with the ball of soji into it with rolling pin.(note: apply oil to the palms before making balls of dough, soji, and while placing ball of soji in that of dough) .Heat the oil in the pan and deep fry it till it gets golden brown colour and serve hot.
