"Curd" Recipies

"Curd"
Curd is a dairy product which is obtained by cogulating (curdling) of milk with an edible acidic substances like lemon juice or vinegar. In Asia, curd is essentially a vegetarian prepration using yeast for ferment the milk. In the Indian subcontinent, buffalo milk is used for curd due to its higher fat content making a thicker curd. The time taken to curdle also varies with the seasons taking less than 6 hours in hot weather and upto 16 hours in cold weather.

Benefits Of Curd

Curd has zero carbs, zero sugars and zero trans fats. With 20% calcium for growing bones. It is a very good alternative for people who wish to reduce fat. It purifies blood, keep digestive system healthy. It contains more Vitamin B than milk. It contains enzymes that keeps the body cool and it is also a good healer.




Rangeela Raita

Ingredients:
  • 2 cup curd
  • 1 finely chopped tomato
  • 1 boiled potato (cut into small dice)
  • 1 finely chopped onion
  • 1/2 cucumber chopped
  • 2 green chillies chopped
  • Fresh green coriander chopped
  • Salt to taste
  • 1 tsp cumin seed powder
  • Black pepper (according to your taste)
Method:
  • Mix all these ingredients Photo 22579
  • Serve chilled

Meethi Paneeri Dahi

Ingredients:

  • 2 cups curd
  • 150 gms paneer (cottage cheese)
  • 2 tbsp powdered sugar ( or any sugar substitute)
  • Pinch of cardamom
  • Pista (pistachio)

Method:
  • Mix curd and sugar (or sugar substitute) well.
  • Mash the paneer.
  • Mix all the ingredients.
  • Serve chilled.


Dahi Kheera Drink

Ingredients:
  • 1 cucumber finely chopped
  • 2 cups curd
  • 1 green chilli finely chopped
  • Few leaves of mint
  • 1 tsp cumin seed powder
  • 1/2 tsp black pepper
  • 1 cup crushed ice
Method:
  • Blend all the ingredients.
  • Serve in glasses


Mango Lassi

Ingredients:
  • 3 cups curd
  • 1 cup milk
  • 1 cup water
  • 1 cup mango pulp
  • 1/2 cup sugar ( or sugar substitute)
Method:
  • Blend all the ingredients in a mixer.
  • Serve chilled.

    Veena, this is an absolutely gorgeous lesson! I love the photos you included. I’ve heard of mango lassi and have always wanted to try it at a restaurant near my workplace. I reminds me of a fruitshake – plus I didn’t know there were any benefits to curd. :)
